Chef Jay Parrino, is a graduate of New England Culinary Institute, in Montpelier, VT. He has been cooking for over 15 years professionally. Jay came to The Southern and saw, with the lack of flame, the opportunity to work on making the menu more delicious through alternative cooking methods; whether it is pickling, curing, smoking, sous-vide or baking our house made breads.
